I don't think it takes hours to find someone, they knew the time frame. They only did it if they for sure saw a person steal and get away. So if you're discreet they won't notice and therefore won't look at tapes? They never watched cameras to catch people in the act, but I don't know about other places.

I used to work at a small grocery store with maybe 10-15 ppl working at once and there was no designated person to watch the cameras. Everyone was just doing their job and occasionally if someone was on break they might skim the screen but only if they were really bored. In reality noone had the time or interest to actively watch it. What the cams were useful for was rolling back footage so they could pinpoint some ppl down. But take my experience with a grain of salt

You can tell I didn't let it cool enough bc of the gummy texture ;_; so a good rule is to let the bread cool fully and proper

What if there's no cafe or anything, would it be okay to walk quickly past the cashiers?

Anyways that's quite fascinating, how often do you hit the same stores up and aren't you worried that they'll check cameras?

I use to work at a franchised store that was way smaller than the other locations, there were 6 aisles and several cams but no one watched them so anyone could just grab what they needed and blatantly walk out because employees weren't paying attention. However because the place was so small they took the effort to roll back footage and take pics of people who for sure were stealing, post them on a board, and did call police a couple times. Maybe be more careful about going back.
