I've had good luck with cardboard and binder clips. Just find a slab of cardboard thats big enough to fold in half and still cover the stencil. Alternately, depending on the size of the stencil, you could find two seperate, large pieces of cardboard or posterboard. Then binder clip around the edges to keep it closed and hold the stencil in place. Be sure the stencil is dry before sandwiching it between cardboard, but otherwise it's pretty simple and has worked well for me.

In addition to this I make my stencils themselves with clear plastic that is like sheets of paper. Once they're dried you can just roll them up and stick an elastic around them, including as a rolled stack if they are a set.
