It is unlikely if they did not see you conceal the item either live or on video but if they see you take something off a shelf, go into a blind spot with the item and come out without it then never underestimate them to take a leap of faith and stop you or call the police if the value of the item is high enough or they are hungering/hurting for a stat. If it is truly is in a camera blind spot they will know it and some people are not above lying and saying they witnessed concealment even the so called keepers of the kingdom.

Yes, it is very risky and could cost them their job and a lot more but never underestimate someone that is desperate for a stop. If they work for a company that has a quota they very well could take a leap of faith and if you "get away" during the stop then you are guilty because now they don't have to recover the product because you could have ditched it anywhere. If the LP is unscrupulous enough to file a false statement that they witnessed concealment they are probably not scared to lie under oath and say they saw it should the case go to court.

They likely did not not and even if they did unless you are recognized the case would be dead until they get you identified.
