I'm glad they mention banana as a egg substitute, but they forgot the most simple egg substitute of all: nothing. Not saying that you shouldn't replace eggs, but that they're often not needed in the first place. Yes, pancakes made of wheat flour and water do hold together just fine, thank you.

Yes but keep in mind when baking the wet to dry ratio. Any wet you remove, you need to replace. :)
