I suspect a lot of this comes from the fact that being vegetarian/vegan is an exercise of our privilege, especially within a culture where we have meat production heavily subsidized so vegan options are more expensive. Having the surplus time/wealth to make such a lifestyle choice is seen as a luxury.

So are oreos, but you wouldn't expect to live a healthy balanced life off of them. You need protein and micronutrients.
