I've made this recipe for use with homemade pizza and really love it, the trick is after you've made the gooey stuff to put it in some bread pans or something and toss it in the freezer... then whenever you need shredded mozzarella you take the brick out and grate it onto whatever needs it. I usually add extra nooch because I love it so much.
