I made it this week, tastes good
- 1 cup sugar
- 1 packet of bread yeast
- 1 liter of apple juice (100% apples, store bought)
I took a cup out of the apple juice, put a cup of sugar in, and the yeast. I let it sit ~4 days, with the lid on the bottle of juice, but not closed (CO2 needs to leak out, otherwise the bottle becomes a bomb).
To measure the alcohol content, we can weigh the bottle, the weight it loss in CO2 escaping is about the same weight it gained in alcohol. proof (oversimplified probably, if I'm wrong please correct me, I did it myself lol):
- sugar = ethanol + CO2
- C6H12O6 = 2C2H6O + 2C02; which means
- 180g/mol sugar = 92g/mol ethanol +88g/mol CO2; which means
- for every 88g of CO2 escaping from the bottle, there is 92g of alcohol left in it, simplified to 1 for 1.
Right now, my bottle weighs at 920g, which means i'm at ~8º alcohol. I don't want more so I tried killing the yeast by freezing it.
All in all it's a fun little project, and tastes better than any other because it's mine lol.
