this is one of my favorite recipes. i usually put it over a cauliflower steak that’s on a bed of quinoa and sautéed/fried chickpeas. you can also just skip the cauliflower steak and put it over the chickpeas and quinoa or chickpeas and rice.
i’ll post the cauliflower steak recipe but the chickpeas i just put in a pan that has hot oil with lots of paprika and lemon. cook them up until they have some black and are crunchy. (i use canned chickpeas.)
