[OC] seitan sausage [10 + 40 min] coinsh.red

this recipe is a WIP, but this batch was nice enough to share. feeds 1 (sausage size of fist).


  • 1/2 c wheat gluten

  • 1/2 c oats

  • 2-3 Tbsp nutritional yeast (I put 1/4 cup and it was a bit too strong)

  • 1 small onion

  • 1 tsp each (powder): all spice, cumin, coriander, ginger

  • 1/2 c water

  • 2 Tbsp soy sauce


  • mince onion

  • mix all dry ingredients + onion in mixing bowl.

  • mix water and soy sauce in cup

  • add wet ingredients to the dry ones SLOWLY while mixing: stop when consistency similar to play-dough (mine was a little thicker than regular bread dough).

  • knead for ~2-5 min: you want the gluten to form long molecule strands like in bread, but it happens fairly quickly.

  • form into sausage

  • wrap with cooking foil (I didnt do that and ended up with a crust, which wasnt bad but not very sausage-y either).

  • dunk in oven at 200 degree Celsius for 30-40 min. I cooked it at the same time as other vegetables. Some people boil the seitan instead but my oven was already on.

This recipe is less chewy than pure gluten seitan, but still chewy enough to give a meaty feeling. More oats and it would have tasted like bread though. Thanks to the spices it tastes earthy (but not what an omni will call "meaty"). Very nice when downed in gravy or if formed as a "steak" in a burger.

Next time I'll ty adding tofu and see if it gives the seitan a more "aery" texture. I also want to do one similar to this one with mushroom bits in it, and one with different spices (mediteranean herbs/chorizzo). I also want to try with different cereals/flours instead of the oats. This one will be a staple though.
