6-ingredient pancakes [vegan]

I don't remember where I found this recipe but I have it memorized at this point because I make it all the time.

1 + 1/4 cups all-purpose flour, sifted

2 tbsp white sugar

2 tsp baking powder

1/2 tsp salt

1 + 1/4 cups water

1 tbsp + 1 tsp canola oil

mix the wet ingredients and the dry ingredients seperately. Combine the two mixtures until just barely combined, batter should be very lumpy. Cook in 1/2 cup increments on a mid-low heat on a griddle or pan with a tbsp or so of margarine with each knew cake. it takes a few fuck ups to find out exactly what works for you. I like mine with syrup and hashbrowns and fresh fruit, who wouldnt?

  • 3 tbsp of potato starch, but I recently just dunked a cup of boiled skinned potatoes instead, and it worked fine

  • salt, 1/2 tsp

I do not know the precise amounts in the recipe, I eyeball it every time.

  • dunk everything in salad bowl.

  • Mix with food processor/blender; until smooth. I've got a handheld one.

  • oil on Teflon pan, cook

Feeds 3-4.

the only way i ever fancy up my recipe is by replacing the water with 1/4c applesauce and 1c curdled soy "buttermilk" with lemon.

edit: seriously though i'm gonna try your recipe. I havent had crepes in 1+ year

What does the curdle do? Is it for taste?

Gives a bit of a sourdough taste and thickens the soy milk which helps in cooking, yeah

Thanks so much for the recipe. Trying this now. Have done once following the intruction from the Vegan recipe app on apknite. You can use the soymilk instead of water tho.
