you can try aquafaba cookies, but afaik you dont even need eggs, the pb is a binder itself, so with only pb, sugar and flour.

There is a facebook groupe called aquafaba -hits and misses, where they share recipes of food, heres a recipe i found on there

3 ingredient peanut butter cookies. An old family recipe veganified!

1 cup peanut butter(or any nut or seed butter) 1 cup sugar 3 tbsp Aquafaba

Optional 1/2 tsp vanilla extract 1/2 cup chocolate chips

consistency should be thick and grainy, add sugar as needed.

Bake at 350f for 15 mins. Smash with fork for flat cookies leave humped for doughy center."

i usually use applesauce to replace eggs when i bake brownies or cake, but im not sure how that would effect the texture of cookies. i haven't made pb cookies in a while (now i really want to), but i'm pretty sure in the past i've done it with just pb + sugar + flour and maybe vanilla flavor
