tos is good in seasons 1-2, horrible in season 3. good in movie 1 (director's cut), very good in movie 2, ok in movie 3, excellent in movie 4, bad in movie 5, good in movie 6.

tng is bad in seasons 1-2, very good from season 3 -6 (the whole writing team changed), good in season 7, ok in movie 1, excellent in movie 2, ok in movie 3, bad in movie 4.

ds9 is mediocre in season 1 with a couple of excellent exceptions (especially Duet), good in season 2-3, excellent from season 4-6, then it stumbles a bit in the first half of season 7 before getting excellent again in the last half of the season. This show is serialized so you have to watch it in order and it's set on the edges of federation space in a stationary location, so has a whole different feel which emphasizes character building, exploration of religion, war and metaphysics.

voyager is mediocre to bad in season 1, fair from season 2 onwards and good from season 4 onwards. it's very effective comfort food and is probably the easiest of the shows to get into, but doesn't really reach the creative peaks of tng and ds9 because they wanted to keep it light and approachable.

enterprise is mediocre in the first 2 seasons, good in the third season and very good in the fourth season (after the premier which resolves a bad cliffhanger)

discovery is ok in season 1, good in season 2, ok in season 3.

picard is ok in season 1.

lower decks is good in season 1.

you can get 1080p AI upscales from joy on magnetdl of ds9 and voyager (but she disappeared before doing the final season of voy).

You can find skip lists online for all the shows if you want to avoid the bad episodes.

Picard and Discovery are awful, still. :-) Alex Kurtzman is a self-entitled jackass who should go to hell, just for screwing up the Vulcans backstory, and giving Young Spock an ugly beard.

Star Trek reboots were mediocre for the most part... Shaky cams and light flares don't make it for a good story, and I still contend that Young Spock was one of the worst miscasts in history of cinema. He looks like an angry squirrel. Totally not Spock.

Didn't watch Enterprise as it looked unappealing. There was some good in Voyager and DS9, though.
