Nice piece of kit. Wish I could use it at work, but they have me using macOS and I am worried if I connect a personal device to the VPN they will identify it and reprimand me.

I would bet your networks team won't make a difference between your Mac and another device if they share the same MAC address. So for a technique which involves not using the two devices at the same time, you could have your other machine identify with the Mac's MAC address on the network and voila.

I think the VPN client, open connect, has a user agent. I need to check that.

It's quite possible but unless you work in a crazy paranoid place only basic MAC checking will be performed (if that's even the case at all)

I just don't want them to be able to fire me for a bullshit reason.

I guess they will find a way if they really want me gone.

And now that I think about it, the MAC address does not seem to be accessible to the VPN server.

There's Amethyst and yabai for macOS, although they're built on top of the existing mac wm. Haven't tried them.
