Why am I not surprised? Bourgeois get big bucks for doing jack-shit while the workers get jack-shit for making the big bucks possible. Of course they're not stressed out, this is a perfect arrangement for them.

Of course they aren't, they are in a position to exert force over the livelihood of others. This is power, and that power is almost certainly going to be wielded.

My boss has a boss, and his boss has a boss, and so on. So should I empathize with my boss? I know that he is more stressed than I am because of the amount of responsibility that is thrown on his shoulders. I can say fuck-it and just go home at the end of my shift.

Even the boss acting as a buffer to their own superiors for your work is still under less stress. If your actions make the boss look bad, or if the division you're in is deemed as needing a change in direction, odds are it's not your boss' ass that will be on the line, it will be yours. A buffer boss may seem to make things easier for you, but they still wield more power over your circumstances than you do.
