If you find a store that’s understaffed like Walmart, they probably don’t have good security. Maybe even none in early morning hours. You should look up the laws on shoplifting. I know in the UK theyre way too soft on theft and often get cautioned by police and fined even for burglary

Estonia isn't too popular of a country, so I doubt anyone here can give any advice. But still remember: Don't get greedy, don't act stupid and don't be stupid.

there were quite a few european lifters on reddit. The security varies by country, and the type of store. clothing stores and large chain stores seems to have more security than others. its better to see what kind of security system they use by scoping out the place.

No specifics. Europe has different stores than the US which have different types of security. Check out w/shoplifting for more details on stores and their security. If you can't find your stores, go in and case it while acting like a customer. PTZ Cameras? Scanners? Item Tags? If any of those terms sound like what your store has, you're going to want to be careful.
