The only real GNU/Linux distro for Android right now is postmarketOS, but right now it doesn't support the SGTab 3. I'd say Ubuntu Touch is a secondary option... but it looks like no-one's ported that to your device, either...
Give what /u/MaxStirner suggested a shot, LineageOS. It isn't GNU/Linux, but it's a solid, mostly libre and anti-Google system.
After that, you can set up a chroot so you can run GNU/Linux on top of LineageOS. Performance is actually pretty good, IME. It's not too hard, either.
