I fixate on certain textures or flavors so my diet ends up being fairly diverse, albeit I have a tendency to remake that same item over and over until I get to exactly how I like it. This week it was spanakorizo.

My kid is getting sick of kale+onions+tofu over rice. I thought I was going to have to either blender mine or give it up.

I also make lasagna with the leftover okara from DIY soy drink and homemade noodles and enchiladas with homemade tortillas and prefab tortilla sauce.

Polenta with home-canned tomato sauce.

Oatmeal with home-canned fruit that is a bit too sweet and too processed to be a kid-friendly standalone snack.

Oh well; none of my adult kids are ever going to complain about their partners' cooking anyway.

Outside, rice with whatever mix-ins I've got and ramen bombs. Inside, I fry cabbage, potatoes and onions in a skillet and eat that. I used to add chorizo but I've cut meat mostly out of my diet for the time being, at least until I'm somewhere to rear or kill my own.

A version of this black bean & rice recipe. Usually throw it in a wrap. Easy, cheap, and makes enough for a bunch of lunches for work.

Also chicken + broccoli chow mein.

tacos are the ultimate general purpose meal. simple is always best. meat, cilantro, onions, tortilla. thats it.
