I wonder if we could create an Anarchist version of Netflix/Hulu/etc - no advertisements, 1080p video files of all popular shows and movies, etc.

The quality of video has very little to do with its resolution, but it does have a ton of 1080p, yes.
I mean, torrent shit. But I kinda want to find some independent filmmakers now.

It works exactly like Netflix, except when you hit play, it torrents the movie and download it while you watch. Essentially, it's a torrent client with a very fancy UI and a neat search system.
e: As a bonus, it's licensed under GPL V3.
There must be some advantages to .sh since it's recommended in the sub, but I'll go with the FOSS solution without a doubt.
e: The source code for .sh can be found here: https://github.com/popcorn-official/, it claims to be FOSS, but there's some minor copyright limitations. Not a big deal. Go with whatever you want, they're essentially the same.
It says in the link that it has a built-in VPN. So then can I just start using it without downloading or setting up a VPN separately?
It's a paid VPN as far as i remember (I'm not certain, you should check it yourself).
... but VPN isn't a must in most countries. I've been pirating tons and tons of stuff (about three movies a week for five years) and I've only gotten one letter from a law firm telling me to pay them some minor fee. I never paid, and they never followed up on it.
If you mean illegal streaming, that does exist. Kodi boxes have servers with thousands of hours of pirated video to choose from. I set one up for my mother.
But the anarchist solution is to make your own server with your own video library (downloaded from torrents, newsbin and filelockers) using Kodi or Plex or emby. With Plex you can even share your library with people that aren't on your home network by letting them remotely log into your server.

That sounds awesome.
I think the better anarchist solution is peer to peer video hosting network with shows under a Creative Commons or similar license. Video production tools are getting cheaper as time goes by, so why play ball with HBO and Game of Thrones (or equivalent) if there is a series just as good that's not backed by ScruUall Megacorps Inc.

Might be a good starting point for an anarchist netflix.
zooqle.com and eztv.ag provide pretty good options for many programs and films is a very simple interface as long as you can use bit torrent and a vpn if your ISP cares.
