i usually use applesauce to replace eggs when i bake brownies or cake, but im not sure how that would effect the texture of cookies. i haven't made pb cookies in a while (now i really want to), but i'm pretty sure in the past i've done it with just pb + sugar + flour and maybe vanilla flavor

flaxseed meal is also good for egg replacer. If you have a grinder (like a coffee grinder) you can just buy whole flaxseeds and grind them up.
